The Ithurria Isabal family have been welcoming guests to the Ithurria Hotel in Aïnhou, France, for three generations. Set in the Basque countryside, the hotel has a warm, rustic ambience and is located close to the coast and the Spanish border. The dining room is the heart of the hotel, and with its terra cotta tiled floors, beamed ceilings and antique furniture the restaurant is ideal for cosy, romantic meals. Head Chef Xavier Isabal cooks up superb family recipes, and we love the Ithurria's signature foie gras pie cooked with ceps and fillets of wood pigeon served with a salad dressed with walnut oil and wild cherries in vinegar; and the Stephane cup – Bourbon vanilla ice cream with chantilly cream,grilled almonds and hot chocolate sauce.
