The popular team behind Edinburgh’s Marque Central has relocated - along with their regulars - to a bright spot on George IV Bridge and is now called Herbe Bistro. A small snacks-selling ‘bistro express’ leads down to an elegant, airy dining room of pale green walls, simple mahogany furniture, and fabulous food. Absolutely everything on the fortnightly-changing Modern British is cooked ‘back stage’ -
the pasta, the ice cream, and of course, the wholesome house bread which is different every day, like the tapas selection. Lots of Scottish ingredients are married with international ones to make exciting and at the same time down-to-earth dishes.
