Run by Kulwant and Rosaline Singh, the dining room at Rajwada is decorated in understated neutral tones, and the kitchen is renowned for their focus on traditional dishes from Rajasthan in India. Signature dishes include the Prawn Masala with a peppery onion, tomato, masala and coriander sauce with red chillies, garlic and lime juice; the Chicken Chettinad – a hot south Indian curry with roasted spices and fresh coconut; and the royal Rajasthani favourite - Safeed Mas, lamb cooked in a rich almond and cashew nut sauce.
