Business is booming at Cafe Merlot. The restaurant was established in the centre of the town, back in 2003 and its menu is a feast of exotic Asian fusion cuisine cum traditional Irish favourites flavoured with a dash of the Mediterranean. Tasty stuff is exactly what you'd expect from a chef acclaimed by Michelin, Bridgestone, Georgina Campbell and just about every other quality restaurant guide going.
